Can I transfer the data from the polar pulse watch to the new ipad pro and edit it? It doesn't work with the old one.

It's difficult to answer without specifying which watch and which iPad you mean and which technology is used there. If I had to guess, it won't work with the old iPad because it doesn't support Bluetooth Low Energy (4.1). The iPad Pro has Bluetooth 4.2, so it should work.
