Can I pair two HP E27Q G4s together and then connect one HP E27Q G4 to the laptop or do I need an additional splitter/docking station?

This depends specifically on the video outputs of the computer! A desktop PC sometimes has several outputs (e.g. HDMI and DisplayPort), in which case this is not a problem. For a laptop with an HDMI output, either a docking station or a USB-C adapter with HDMI/DisplayPort is required to connect two monitors.
