Can I connect MacBook Pro and Eizo FlexScanS2410W with the following two adapters: DVI - HDMI adapter and HDMI - USB-C? Is this better than USB-C - VGA?

I'm not quite sure I understand your question. Do you want to know if using two adapters with DVI as the target gives a better picture than a direct VGA adapter? If so, the answer is yes. VGA is an obsolete analogue image transmission standard. Alternatively, you can just buy a USB-C to DVI adapter, then you don't have to carry around two adapters.
