are win7 64 drivers still available for the NUC5I7RYH or are the drivers downward compatible?

We use 5 such NUCs with Windows 7 Professional in a company. You should deactivate both SecureBoot and UEFI in the BIOS, Windows 7 only half-supports these technologies, so it's best to deactivate them straight away, and you shouldn't be able to get a boot partition larger than 2TB into the system anyway.

Why not upgrade to Windows 10 right away? My Nuc runs great with it (64 bit of course).

Yes, I even cloned another Win7-64 system and saved a lot of time. But do a BIOS update first, otherwise you will have start-up problems.
