Normally there are restarts only when you press the power button for several seconds, but you can also activate functions in the settings so that a smartphone does not turn on in your pocket. What I would also recommend is to install the latest MIUI updates, if it still shows new updates.
No, an expansion option with a microSD card is not possible with the Xiaomi 12 models.

We have different suppliers for these models and relatively high purchasing conditions for the "smaller" one, which is why the prices are rather absurd.

As far as I know, there are no differences in the software, I think it's just tailored to the model. Have you compared the photos of the phones? If not, there are standardised photos on gsmarena. I don't know much more about it.
