Can the machine also be used without a filter? We would like to do without the filter as we use filtered water...

Yes, it can be left out - the machine doesn't recognise it. It is only plugged into the water tank.

Hi, is the portafilter fully out of metal or are there plastic inserts? I'm looking for a machine where there's no plastic in contact with the hot water.

The portafilter is basically made of metal, but there is a disc (I mean made of silicone) under the replaceable portafilter insert, which can also be removed.

Does the machine have a cool touch steam lance and how many sieves are included?

The scope of delivery includes a 360° steam / hot water wand and 3 sieves, a pressure sieve with a sieve tray diameter of 54mm and a pressureless sieve for 1 and 2 cups as well as a sieve for E.S.E. pads.
