Hello, Although I don't own a Mac Mini, but a Mac Studio, I'm still happy to answer. I have successfully connected two of these monitors to a Mac Studio M1 Max. Everything works perfectly. I am very satisfied.

Unfortunately, we have no direct experience/proven compatible solution for this. According to consultation with Samsung support, conversion between jack and USB-C should theoretically be possible with an appropriate adapter (digital/analogue converter). In our range, I find solutions such as Audio-Technica AudioT ATR2x-USB Adapter 3.5 to USB-C bk 3.5mm to USB Digital Audio Adapter or https://www.digitec.ch/de/s1/product/logilink-usb-c-zu-35-mm-digital-analog-audio-adapter-12959000. Unfortunately, we cannot say for sure whether it will work/fully compatible.

The monitor supports image transfer via USB-C, so I don't understand why there are reports that this is not possible. You could also use the HDMI cable on the Mac Mini. Could it be the cable connections? It should work with the cables supplied.
