Can I use the mouse without the keyboard? So do I get two separate USB ports for mouse and keyboard?

No, there is only a Bluetooth USB adapter. Maybe you can buy a separate one...

As far as I can see, there is only the difference of the keyboard layout. DE and CH for the German and Swiss markets, UK and US for the English-speaking world. I would only go for US if you are developing software and are prepared to forego easy access to umlauts etc., otherwise I would go for DE or CH - depending on your preference. I suspect that especially UK and US are (grey) import versions (???) and therefore the delivery costs are passed on to the buyers because of the comparably low margin.
in principle, yes, you just need a free usb slot. but the keyboard does not have an apple layout.
