Hello Without OC the be quiet! Pure Rock (15.50cm) will do. My suggestions for OC: Air Cooler: Scythe Cooler Mugen 5 (15.50cm) be quiet! Dark Rock Pro 4 (16.28cm) Noctua NH-D15 (16.50cm) AIO Water Cooling: NZXT Kraken x62 incl. AM4 (3cm) Corsair H100i v2 (5.50cm) Regarding space, of course a water AIO would be best. The Mugen 5 also fits higher RAM bars, as the heatsink is offset. With Be Quiet and Noctua it could be tight. I hope I was able to help.

I have absolutely zero experience with the Optane. But for rendering, I would definitely go for one or two SSDs with 500+ GB, one for raw data and the other for OS + final data. Additionally I would buy a GTX 1060 6GB (or higher), because modern render tools use the graphics card for rendering and are much faster than the CPU. New Photoshop and InDesign also use the graphics card to some extent.

Have a look at the noctua website. There you will find all kinds of Rams. Even the cheap Noctua fans are very good.
It depends on the application you want to use. But because i5-8600k is newer and cheaper, I would choose it, especially for games.
It would work purely from the socket. From experience with an i7 7700K and a Z170 chip, I can tell you that you have to update your mainboard to at least the 6th generation Skylake. Otherwise, your CPU will not be recognised or will not function as desired. But I can't say whether this would also be the case with your desired i5. How do you see it with a Z270 chipset motherboard? You would have far fewer problems with such a motherboard. Correct me if I'm wrong. These are simply empirical values
I'm not an expert but I can say that I find this almost perfect, here are a few more productions that would fit better.
