Unfortunately, I can't say anything about this yet, as mine has never worked properly since I received it! The sound is transmitted, but no picture. At first I thought it was the USB port (the first one I used only had USB2), but now I realise that it doesn't work with USB3 either.
This is with sound. I used the stick to digitise VHS and there it was with sound.
It behaves like any other USB Web camera. I don't have Mac but I guess it sould work the same way there as in Windows or Linux.
I didn't test with a PS5 but with a Nintendo Switch and I can get the stream on Windows. I'll have to see if there are any anti-copy safeties like on some DVD players (but I doubt it). Then to capture the stream and redirect it to twitch.tv, you can use OBS (which I recommend, because it's a FOSS) or Streamlab without installing additional drivers than the Windows ones.
