1) What exactly is the difference between UNIVERSAL, DOOR and WINDOW? Or the other way round: 2) what is missing from DOOR compared to Universal when I want to use the sensor on a door and 3) what is missing from WINDOW compared to Universal when I want to use the sensor on a window?

Helpful answer

Universal -> Temperature measurement and air pressure. Can also detect tilted windows
Window -> Can also detect tilted windows, no temperature and air pressure information.
Door -> Temperature measurement and air pressure, cannot detect tilted "windows".

I recommend Universal.
