"Mediocre brightness and contrast" - the EV3895 seems really top of the line but at only 300 nits, that's actually insufficient for a "premium" device these days! My office is very bright; I use an EV2785 with which I am quite satisfied; the 350 nits brightness of this model is already too dark for me...
Sharing the screen as a whole actually creates a mediocre user experience on the other side(s), to say the least (even if they could zoom locally...). I therefore only ever share single Windows (not full screen; e.g. from browsers) or else PowerPoint natively when working on this screen. This works well - however, when changing the content to be shared, the sharing must first be stopped in order to share the new content afterwards (there is no direct change - except from one browser tab to the next).
M1 had problems with certain monitors (at least in the beginning), among others Color Format and Color Profile. With Mac mini M1 with OS X Big Sur still, but with Eizo with OS X Monterey the issues seem to be solved - google for M1 and Eizo for the monitor support matrix. I have the EV3895 with a MacBook Air (but the latest Intel version). Depending on the settings, it's not the brightest monitor.

Yes via the free USB-C port at the back of the screen, fast charging of the mobile phone (Samsung S10) works. Also via the USB-A ports on the side, just slowly. Both with the screen off and without a notebook switched on.
1) If possible, use the USB-C function, which allows 4K and 60Hz, HDMI would also work. 2) The white device has a higher HDMI standard that does not exist (the maximum that is currently available is HDMI 2.1), so you can also buy the black model. The Eizo products are quite expensive. If it doesn't have to be Eizo, I would recommend this device, it even has a built-in docking function with LAN connection and can also charge the HP notebook via USB-C: Dell U3821DW (38 ", 3840 x 1600 Pixels)
Hello I have a MacBook Air myself, it works with either: -Purelink Mini DP/Thunderbolt to (DVI, 10cm) and corresponding DVI to HDMI cable or with StarTech Mini DisplayPort to HDMI Adapter - 4K mDP to HDMI Converter - UHD 4K 60Hz (HDMI, 15.20cm) Option 2 is better as there is also an HDMI cable included with the Eizo.
