Bought the card and received the redeem code - my question: here on the web page it says 18 December 2019 as the redemption deadline, in the mail it says 3 January 2020. Can you tell me which date is the correct one?

Search for 2080s Strix water cooler. The Strix models have custom water blocks and are only made for the series.

Is it compatible with an Intel Core i7-3820 CPU 3.60 GHZ with 16 GB Ram? Or can the processor be overloaded or not offer optimal quality? If not, which processor would you recommend?

The processor doesn't change anything for GPU compatibility unless it is not PCI-Express compatible. However, this processor may not be powerful/efficient enough for a 2080S, and an upgrade to this generation requires new RAM, motherboard and processor (at least).
