Hello. Unfortunately the problem is well known and the Apple AirPods Max are no exception. That said, of all the on-ear headphones I've used, this is the one that has the least problem. The contact part (cushions) is magnetised and can be removed, allowing better ventilation and drying if necessary. I've never had 'wet' ears, but more a condensation effect.

I haven't used the audio cable yet, but I tried it on my stereo system and it works. I think it will also work on the plane, but I don't want to give a guarantee. The headphones weigh about 380g, so they are not the lightest, but I find them very comfortable. The weight doesn't bother me at all and I really wear them for hours.

It depends. For me, for example, the sound quality, the ANC, and the wearing comfort matter a lot, which is why I wear the AirPods Max more, because the AirPods Pro hurt my ears over time. But if you don't mind these 3 points, I see no reason not to buy the AirPods Pro, because they are very compact and almost as good as the AirPods Max, especially for the price difference.
