I'm a little afraid that the fan in the NUC is too loud. Does anyone have any experience? (I want to replace my Surface Pro 3 as it is too loud for me as a desktop replacement!).

I'll have to take a closer look, but unfortunately the fan on my new NUC7I7BNH (with Windows 10 installed) won't stop working. I tried a BIOS update (https://downloadcenter.intel.com/product...), but unfortunately that didn't help either. Changing the fan mode in the BIOS to QUIET didn't help either. The only negative thing about the PC, unfortunately.

The fan supplied with the Intel NUC models generally provides just enough cooling for home office solutions with screen resolutions up to 1080p and not high processor performance. It is therefore generally too small ex works for higher requirements - let alone 4k UHD resolutions!
Those who want to avoid the problem of the loud fan and unleash the full flavour of the NUC: urgently need another cooling solution!
The high-quality and fanless aluminium chassis from Akasa, whose size/type varies depending on the NUC model, serve as an example.

However, you have to remove the mainboard in an "upgrade procedure" and integrate it into this aluminium case.
I am the owner of 5 NUCs myself and have had no "overheating" problems since such installations for each model.

In general, the smaller the enclosure (and thus also the heat sink), the more air has to be blown through these cooling fins. My PC is not audible under load, but you almost have to build it yourself for that...

Unfortunately, we are not yet able to provide any field reports on this.
