Last time when I preordered the new Pokemon game it arrived on release day; due to the current pandemic Digitec is probably fully occupied. Let's hope for the best.

As far as I know, the language of the game adjusts to the language of the Switch. If the language of your Switch is English, the game should also be in English.
The more expensive version is an offer from Softridge, but the game is the same.
Switch games always have all languages in the software, only the text on the packaging is language-specific.
Yes, you can choose the game language (in-game dialogues etc) at first run. Per the game design, the dialogues are text bubbles, no audio. So if you want to play it English, it works perfectly.

In general, it doesn't matter which language edition you buy, the system language you choose for the Nintendo Switch determines the language within the game (I just tested it). The only difference between the different language editions is probably the labelling on the game cover.
It's really just the language on the box, the game is multi-lingual.

I got this and playing it in English. I think language is always picked from console settings, all my other games are also "German"

No, delivery is of course not prohibited. But there can be delays. If you order it now, you should have it next Tuesday: "Estimated delivery date: Tuesday 07.04.2020, if ordered by 19:00 today".
