Will Swissom numbers be taken over? How does the cancellation with Swisscom work? So my Digitec subscription will not start until I have successfully cancelled my Swisscom subscription?

Yes, the subscription only starts after porting and is free for the first month and then you can enter the code from this promotion in the cockpit of digitec connect.
