Why are 4x8 more expensive than if I buy 2x 2x8, even though they are exactly the same RAM?!

Because the G.SKILL 4 x 8GB bars have been tested with each other.
You save yourself potential problems like BSOD and other instabilities.
With Quad Channel (for example X299 Platform) a quad kit should be installed (you can recognise this by the Q in the exact product name) and not a mixture of 2 dual-channel kits.
