Various statements are wrong here. https://www.gigabyte.com/Motherboard/X470-AORUS-GAMING-7-WIFI-rev-10#sp Officially only 2933 memory is supported, higher is OC. No Quad Channel (AM4 Limit.)

We always quote the maximum performance possible according to the manufacturer. Even if this would mean that you would have to overclock the RAM. You don't need Quad Channel to overclock RAM. XMP is the word.
