There is no support / retaining system for the pedals, correct? Is it possible to attach the quadrant to the chair on the right instead of the table, where the thrust levers, spoilers and flaps are located in a jet?

To fix the pedals, it's best to buy the Playseat floor mat. You fix the pedals with Velcro and it holds very well.
On the left and right of the seat, you can attach adjustable tables where you can glue on instruments as you like with Velcro or, best of all, screw them on... These can be easily adjusted upwards or sideways.
I have been using this product myself for half a year with the Saitek X56 and the SaitekPro rudder pedals.
Mainly fly helicopters As 350 b3 with it in the X Plane 10.
I am still very satisfied.
