Is it possible to load Cardano and other cryptos as well as Layer 2 cryptos onto the ledger that are not on the description?

You can use the Ledger Nano X for Cardano, e.g. in combination with Yoroi Wallet. I am not aware of any special layer 2 features of the Ledger software.
