Question about WD Red Plus
Is it normal that the hard drives are so loud? Not when writing, that's common. But there is a constant "hiss" as if the fan is too loud (and no, it's not the fan... I didn't have that with the 6TB before!).

Yes, it is normal. The model numbers ending in 101 instead of 100 are much more loud due to a new manufacturing process.
