If I have a Sonos Gen 2 one, the Google home and assistant apps on the iPhone, do I still need a Google speaker?

I can't answer that question for you. I would try it without to see if it meets your requirements.

It works, but it's just not very comfortable. Then you're probably almost faster with the Sonos app, even if you can't make voice instructions there. But Google mini is perfectly adequate for that.
