If I equip the two M.2 slots with NVME cards, do they each have the full speed if I also assign the 1st PCIE x16 (GraKa) plus the 2 PCIx1 and then possibly also assign one or more of the 4 SATA ports?

What is for sure is that when you put a second graphics card in, the lanes from the first slot and the second are usually shared. So you won't have 16/16 but 8/8 or something like that. I don't think the m2 SSDs should be affected by this reduction.

With this board, you can ideally mount 2 x M2 SSDs and then run them in Raid 0. It is important that you set both SSDs to Raid 0 in the bios before installing Windows.
This way, with 2 x 500 GB SSDs, you end up with 1 TB SDD with "theoretically" twice the speed.
Disadvantage: If one disk fails, the data is lost as if both disks had failed. In other words, double the risk of failure.
