I know it's a stupid question, but: Is it possible to simply access the data on the hard drives with this article? Not as a docking station for writing, but access is still important for me to know....

Yes, the Icy Box IB-2913MCL-C31 is connected to the computer via a USB-C interface. The M.2 NVMe SSD installed in the Icy Box IB-2913MCL-C31 (whether at SOURCE or TARGET) appears in Windows Explorer as a normal drive with read and write access (just verified with my Icy Box IB-2913MCL-C31).
Yes, it can also be used as a docking station. I haven't tried it on all interfaces
