I don't have a Samsung smartphone, only the smartwatch 3. Can I also "set it up" with it, or does the "installation" also work without a Galaxy smartphone but only with the smart Watch 3 alone?

You can install the samsung app "smartThings" on any android and set it up, I can't say anything about ios.
