How much free memory does the device (64 GB) have after the Windows installation? Will 64 GB be sufficient for installing business software afterwards?

Windows 11 Pro currently requires approx. 25 - 30 GB, but this may change in the future. A typical installation of Office 365 requires around 3 to 4 GB of storage space, so there is still room for additional software.
