How can you clone an M2 NVME SSD if you only have a notebook with 1 slot, for example? Which product does digitec recommend?

Unfortunately, Dussh's answer does not help Patlecat - or anyone else who has this problem - because an M2 NVME SSD only has a so-called M-Key (and not a B- or B+M-Key) and therefore cannot be installed in such an external enclosure with a USB-x interface. An M-Key SSD requires an adapter to PCIe - and such adapters are not (yet) available on the market.

It's much easier: you don't have to clone, but you can create an image of the existing NVMe SSD (e.g. with Acronis True Image) and save it somewhere. It doesn't matter whether you use USB, WLAN or LAN. Then install the new NVMe SSD and restore the image in the same way. It's one step more than cloning, but it's universal and independent of the editing sites.
