Do I have to choose a version in advance - either SIM or e-SIM? Can't all X6 Play watches be operated with a physical SIM card?

You have to decide in advance which version you want: Either one with a physical nano SIM card or one with an eSIM. There is no version that supports both at the same time. The version with nano-SIM has no eSIM support, and the eSIM version has no slot for a physical SIM card.
