Question about Garmin Vivomove Trend
Can the watch also be set so that the display is only activated when tapping but not when making jerky movements? I would prefer to see the data only on the mobile but not on the watch itself.

The watch can be set so that the display is only activated when tapped. You can adjust the gesture settings in the menu to deactivate display activation by hand gestures. Press and hold the touchscreen, go to the settings and adjust the gesture options accordingly.
To see the data only on the mobile and not on the watch itself, you can manage the smart notifications on your smartphone to see which notifications you want to receive on the watch.
