Can I attach the cable with the eyelets to my motorbike battery and leave it like this so that I don't have to remove the battery over the winter?

Yes. You can leave the grommets permanently fitted once on the battery and connect the charger with the plug only.

That's exactly how I practice it!
Note that batteries do not like cold temperatures (especially when charging). However, with the temperature sensor, the charger can take this into account.
