After two unsuccessful attempts with other adapters, I hoped it would work with this one. But no, the sound still comes out of the iPad (Air 2020). Do I have to make any settings or is there something wrong with the device? I actually assumed the plug-n-play principle...

Maybe it depends on the iPad, but it works for me (iPad Pro, 11 inch, 14.1), adjust sound from headphones: swipe from top right brings up sound settings (and others)).
