The plate is definitely too small: 16cm wide with "only" less than 12cm useful for screwing, it will be one or the other, unless you cobble together an extension of this plate on its (solid) base ;-)
Yes, the Moza CPR2 pedals fit on the Cockpit. The pedal plate of the Cockpit is rigid and compatible with all common brands, including Moza. If the holes do not fit exactly, you can use a drill to add two holes as required to fit the pedals.

My base, DD1 QR2, will unfortunately not be delivered until the end of January, but should fit! Stability is brilliant! You can look up the heights in the manual, I can't answer that. I'm 170 cm tall and there's certainly plenty of room to go up.
The UM-1 are for the tilt of the base, the tilt can also be adjusted directly on the F-GT, but not continuously. The existing holes in the F-GT fit the DD Wheelbase. If the UM-1 is still to be used and the other existing holes would not fit, it is easy to make them yourself. Not buying the F-GT just because the existing holes might not fit makes no sense to me. I am completely happy with the F-GT and can recommend it to every SIM racer.
The pedals can be mounted quite close to the steering wheel bracket and you can also slide the seat forwards and backwards.
I have mounted the additional monitor holder between the steering wheel and the pedals - it fits well with my 1.77. If you are shorter, the monitor holder should be behind the pedals. If you are shorter, the monitor holder should be behind the pedals, then it should not be a problem.
