If you have headphones connected to your phone, you can accept or reject an incoming call on the watch. However, the watch itself has neither a microphone nor a loudspeaker.
As I don't know the Garmin Fenix 5, I can't answer competently, Just this much: after several trail run races with Fenix 7X over 50-100km with hours of running in the pitch dark following a GPX track, I can say that the GPS is tremendously accurate, even when the wall is extremely steep (normally the accuracy decreases the more vertical the terrain is). The battery power is easily sufficient for long ultras. Also in terms of biometrics, heart, breathing, sleep, etc. The performance of the accelerometry is amazing: I look at my watch in the pitch dark and the display lights up immediately. During muscle training, the accelerometry recognises which muscle groups have been pumped, approximate weight/sets/reps. Even after using it for over a year, I'm still amazed. I actually got a lot more than I expected before I bought it, and that rarely happens to me.
"esim lte" is incomprehensible. It probably means eSIM LTE. Answer: the Fenix 7X has Bluetooth and WLAN and is paired with WLAN and a smartphone, which naturally has a SIM card and 5G (LTE). To fully utilise the Fenix 7X, smartphone+Internet+BT+WLAN are required. Without network coverage, the watch records all data offline and makes upload available as soon as the network is available.
