That's how it's meant to be. You only change one side. The other side is fixed. Works wonderfully from my own experience: I use the large version, my partner the small one.
Strange... If you connect the device to the Fitbit app via Bluetooth, you should be able to select your new Charge 3 automatically. You could even switch back and forth between the old and new Charge. I assume the watch battery is fully charged and Blutooth is enabled on the phone...? Maybe you still need to update the Fitbit app first...?
The bracelet is suitable for people with very narrow to very wide wrists, it covers a circumference of approx. 16 - 22 cm. Take a piece of string, tie it around your wrist and measure. If the length is between 16 and 22 cm, the bracelet will fit.
The function has supposedly been activated since 20.02.2020 and will be gradually distributed to the Charge 3 as part of a firmware update.
I haven't received it yet, but I'll wait for the next few days.
Fitbit offers an app, but as far as I know without a sleep phase alarm clock. Only a silent alarm clock (the device vibrates at the desired time) is integrated in the app.
Apparently, the function was requested a long time ago but never implemented.

I have the Fitbit Alta and can give you the following answers;
- Yes, audible does not exist at all, at least with the Alta.
- I have never overslept. It does vibrate on the wrist after all.... It doesn't stop until you wipe it off the display.
- Snoozing doesn't work, but setting multiple alarms does.
