Digitec is a seller and it is rather unusual to sell something on a trial basis ;-) I use the same product, but directly from the provider: digitalrepublic / of course you have a free trial month here - exactly for your purposes.

My latest knowledge is that there is no dual use as a multicard. However, you can convert your card into an e-sim and use several cards in one compatible mobile.

There are instructions for this and it requires identification with ID/passport and selfie photo on smartphone.

As far as I know, you can convert the physical SIM to an eSIM very easily and quickly on the provider's portal - so it works for the Apple Watch.

Have you registered the SIM card on the Digitec iot website? This must be done first, otherwise it will not be activated.
