I know this is a strange question but a colleague of mine has upgraded from 32gb to 64gb. the 2 new bars are the bars from the 2nd link the old ones are from the first link. His problem is that the bars are running at 4000mhz and not 5600mhz Xmp profile2 is enabled. When he removes the new 2 bars, everything runs at 5600mhz again.

Hey I would recommend you to buy the exact RAM again or to buy a completely new one. The CPU can't make up its mind then or it sets a minimum. Ps: Bios update or in the boot menu to select the appropriate performance.

Did I understand correctly that the RAM form factor only refers to the size of the RAM and not the performance? This is in order to use smaller housings? Will they fit in the Z690-F motherboard?

Z690 is the Intel chipset, I assume it is this ASUS board: ASUS ROG STRIX Z690-F GAMING WIFI (LGA 1700, Intel Z690 (DDR5), ATX) This RAM fits into this mainboard. The performance is defined by the clock speed (5600Mhz), among other things.
