Actually, there shouldn't be any problems connecting screens, because the Apple Mac Mini has USB-C (Thunderbolt) and HDMI. I would definitely use a 4K 3840 x 2160 pixel display with it, i.e. not two smaller ones, and also not a widescreen display, because they are often 34 inches and usually only have 3440 x 1440 pixels.
My suggestion would be a 32 inch model, e.g. like these, which have a height-adjustable base and also many connections, including USB-C.
