So 60cm depth, but the frame has 68cm in depth, so with a 60cm depth table top, will the frame hang out on both sides or is the depth also adjustable?

I think the depth refers to the feet, which are longer than the frame top.

The depth is not adjustable, so the frame would stick out from one side.
