This seems to me to be a rather oblique use case. If only because of the different target temperatures for white and red wines, wine climate cabinets with 2 temperature zones might be the more sensible choice. Otherwise, there are a lot of uncertainties: How big is this cellar? What is the target temperature? How high is the moisture input? Where is the dew point? You risk mould and rot there, I advise against it.
