If I have Ubiquiti AP-AC-Pro and now want to add 2 x UniFi AP-AC-M MESH, do I need anything else?

To extend the network in the normal way, the UniFi AP-AC-M Mesh is sufficient. With mesh, the APs are used like repeaters and the APs will continue to work even if one of them fails.

Yes, because MESH does not do WIFI roaming like PRO. Alone PRO has no sense, LR (Art-Nr 5631190) is cheaper and better.
I also recommend Unifi USG Router (Art-Nr 5776945) and UniFi Cloud Key (Art-Nr 5683751) to have and manage network.
