I bought this cable and the "Digitus Digital to Analog Audio Konv. I want to use it to bring the audio signal from my Blu-Ray player to my analogue stereo system. This also works, but only for stereo signals. With 5.1 audio, there is only a hum. Is it the cable or the converter? Or is it me?

I think it's more likely the converter. I've picked out an excerpt from hifi.de for you:
"With an optical or coaxial connection, you can at most transmit 5.1 surround sound (such as Dolby Digital or DTS) without any problems. For this purpose, the 5.1 sound is transmitted as a "bitstream" in its compressed form, as it comes, for example, from a disc or TV broadcast with Dolby Digital 5.1. The AV receiver or a soundbar decodes the data stream to get the individual sound channels for the speakers in the 5.1 setup."
I think it's the decoding of the channels that's the problem. If you want to be sure, ask customer service:
