I am looking for a "real" multi-WAN router with channel bundling (i.e. not just load balancing or failover). This FritzBox doesn't seem to be able to do it either. Viprinet routers are supposed to be able to bundle multiple connections, but I can't find them in Switzerland. I would like to bundle existing, weak Swisscom and Sunrise connections at one location for more bandwidth. If possible, also via an existing Mobile Data contract via the mobile phone network. - I would be glad to receive hints and suggestions, thank you very much.

Viprinet has 2 partners in Switzerland, ask them if you can do a POC. We already looked into Viprinet years ago, but due to the partner situation in Switzerland (Studerus used to be one as far as I remember, but they quickly took it out of their range) we let it go - because bonding is also much cheaper and easier.
MultiWAN with a few simple rules can also be done with opensource, and without the deepest knowledge. I've been doing this with Opnsense and Supermicro HW for a long time and it actually works quite well. But if you then have to build VPNs on top of it, it gets a bit trickier again...
