Hello, I use a "normal Chromecast" to play videos on the TV. Now my question: 1. if I only want to stream music to my 3.1 system, does that also work with the "video CC"? That is, without the TV having to be running? Or do I need the audio CC if I only want music? 2. can the CC-Audio "wake up/switch on" my Denon receiver as soon as I give the command to play music on my mobile phone?

I assume that the Chromecast is connected to the Denon receiver via HDMI input, right? Then the TV does not necessarily have to be on to listen to music. Yes, with the "normal" CC you can also only listen to music. Resolutions up to 48kHz, 16bit. The CC Audio can handle up to 96kHz, 24bit.
Question 2:
No, that's pretty much impossible. The CC Audio only has cinch or Toslink.
