In my case, the camera carries out the updates automatically. I don't do anything.
If this is not the case for you, you can start the update manually under General > About device > Check for firmware updates.
If that doesn't help, I would try resetting the camera and then carrying out the update again.

I would enquire directly with Eufy. There may be a reset function.
