Has anyone connected the Mini to a 49" monitor with 5120x1440 resolution?

Yes, with a USB-C to Displayport 1.4 cable. However, I have reduced the display frequency to 60Hz to avoid random black screens.
I've read online that some monitors have a firmware update, which I haven't tried, so there's hope we can do better.
