Can I connect the fibre optic cable directly to the UDM Pro with the provider Salt (fibre)?  I found the bridge mode with Google, but I would like to do without the Salt box altogether (I don't need a telephone).

No, you can't. Salt does not offer native Ethernet but XGS-PON and this is not supported on the UDM-Pro.
You can connect the UDM-Pro through a 10GBASE-T SFP+ behind the Salt box. But you can't get around Salt's CG-NAT either way.
