Theoretically yes, it is in the setup menu how it sounds ??? However, the whole surround idea is gone ... but I would not give it away again, but I have 5.2! Difference to Onkyo or HK is big (positive)
It is no problem to operate the Marantz "only" in stereo. I can't say what it delivers in terms of sound in stereo mode. But with all the additional features it offers, it's definitely worth buying. I myself use an NAD C 326 BEE: https://www.stereo.de/hifi-test...
Sure, it's excellent.
In the past, AV receivers were probably not so good in stereo mode, but today's models are more than adequate for most needs!
Last year I used an AV receiver for months only for listening to music (I knew I would move, since then it has been connected to the TV with more speakers)...
