Number of processor cores refers to the total number of physical or virtual CPU cores in a processor. The more processor cores a processor has, the better you can do multiple tasks simultaneously. Performance cores refer to a special type of cores to optimise the performance of certain tasks, such as gaming. These cores are often more powerful.
