It's the 2014 Version. Apple hasn't released a new Mac Mini yet.

It would probably work, but from my feeling and experience I don't think it would make sense. The graphics performance depends on the RAM and with 8GB almost everything will be used for the graphics. The spec says that two monitors are supported. I would also go for the Thunderbold connections, but the monitors are quite expensive. There are external solutions like Matrox TripleHead2Go SE15 (costs almost as much as the Mac), but with 3 monitors a maximum of 3x1360x768 pixels is possible. I don't know what the delay is like and whether it is possible to work this way.
